MENUSFour Star Cuisine offers a variety of entrée choices and will change the menu offerings on a regular basis. However, if you ordered something that you like which is not offered on a current menu feel free to order it again. If you have a favorite family recipe you would like to eat, just provide it one week before your next scheduled cook date and Chef CJ will be happy to make it for you. The items listed below are just a small sample of the many dishes that are available to you. Chef CJ is always happy to make a wine recommendation. If you are following a specific diet plan, such as South Beach, Chef CJ will happy to make those meals for you. If you are counting calories and would like any of the following menu items “lightened up” let us know and we can usually accommodate you. For those of you who enjoy a meatless main course, many of these dishes work well meatless or with a Tofu substitute. Just ask. |

PORK
For more pork offerings, check out the Asian menu Ginger Pork – Thinly sliced center cut pork loin medallions sautéed in a delicate ginger infused teriyaki sauce garnished with scallions and sesame seeds. Cider Braised Pork – Tasty pork shoulder braised slowly in a Dutch oven full of spiced cider. Fork tender. Honey Baked Ham – Full picnic Ham or Ham Steak baked with spiced honey glaze – with all the trimmings. Not just for holidays anymore. Cherry Chocolate Pork Chops – Thick center cut Pork Loin chops pan seared to perfection and finished with a succulent demi glace infused with cherries and just a touch of dark chocolate. You won’t believe your taste buds! Apricot Glazed Roast Pork Loin – Trimmed pork loin studded with crushed pistachios and slow roasted with a rich apricot glaze. Papaya Chicken – Chef CJ’s signature dish (pictured as an appetizer in the martini glass) – Sautéed chicken breast tossed in Asian Aioli smothered with Tropical Fruit Salsa and Papaya wedges, served hot over rice as an entrée or chilled as an appetizer. Chicken Enchiladas – Gently poached chicken breasts shredded and wrapped in tortillas. Baked with cheese, jalapenos, onions & enchilada sauce. Served with Spanish rice & refried beans. BBQ Chicken – Roasted in a tangy BBQ sauce, this is served picnic style with potato salad and corn on the cob. Not just for summer anymore. Mediterranean Chicken - A best seller, this is packed full of goodies; sautéed with artichokes, Greek Olives, bell peppers, capers, raisins and pine nuts in a delicate cream sauce. Served over pasta or rice. Chicken Fettuccini – Chef CJ adds a twist to this favorite by adding sun dried tomatoes and caramelized onions. Turkey Meatloaf – Prepared with Italian cheeses this isn’t your average meatloaf! Served with mashed potatoes and gravy. Roast Turkey – Not just for the holidays. Enchiladas – Ground beef simmered in Mexican spices wrapped in tortillas with cheese and onions, topped with diced onions, jalapenos and enchilada sauce. Served with Spanish rice & refried beans or coleslaw. Tacos – Spicy ground beef (or turkey) with all the trimmings. Includes Spanish rice & refried beans or coleslaw. Pot Roast – Just like grandma used to make. Served with green beans, mashed potatoes and gravy. What could be more American?! Meat Loaf – This isn’t your mother’s meat loaf. Mixed with a blend of Italian cheeses and sun dried tomatoes, this takes meat loaf to a whole new level. Of course, it still has to be served with mashed potatoes and gravy! Grilled Kielbasa – A comfort food favorite. Kielbasa sausage is pan grilled with onions and potatoes for a one-dish meal. Veal Parmesan – A classic. Tender Veal medallions breaded in herbed Italian breadcrumbs and baked to perfection in a rich tomato sauce and melted cheese. Served with buttered pasta, Arborio rice or Polenta.

Blueberry Salmon – Chef CJ, a Pacific Northwest Native, combines two of the most beloved Northwest ingredients for an extraordinary taste treat! Baked White Fish – Usually made with Cod, this simple dish is big on flavor; baked atop caramelized onion with a rich Asian Aioli this will become a family favorite. Also available: baked oysters, in season. Coconut Crusted Halibut – Pan seared Coconut Crusted Halibut topped with Tropical Fruit Salsa and gently sauced in a peach infused Buerre Blanc. Pan Seared Ahi Tuna – This popular dish is pan seared Rare drizzled with Chef CJ’s teriyaki sauce and a dollop of Wasabi Aioli, served with lemon scented Thai Jasmine rice. Pepper Halibut Poached in Cream – Halibut, or other fresh white fish, gently poached in cream sauce with sautéed jalapeno peppers and caramelized onions. Seafood Risotto – A mélange of shrimp, fish and smoked oysters tossed in a creamy Parmesan Risotto, this simple but rich tasting dish is best served with a salad of spring greens in a light vinaigrette. Tilapia – Baked or pan seared served with fried plantains and rice pilaf. Catfish – Breaded in cornmeal and fried to perfection. A true southern tradition. PASTA Spaghetti Bolognese – Spaghetti in a rich, meaty tomato sauce. Quatro Formage Mac & Cheese – This is not your mothers mac & cheese. A blend of four cheeses and a hint of cream, this is one of Chef CJ’s most requested items. Mediterranean Pasta – A creamy sauté of bell peppers, artichoke hearts, Greek olives, capers, raisins and pine nuts, this can be made with Chicken, Shrimp or meatless. Baked Ziti – Rich tomato and meat sauce tossed with ziti and baked with a blend of Italian cheeses. Lasagna - This is the traditional tomato-meat sauce layered with cheese and baked to perfection. Tuna Casserole – Chef CJ uses a blend of cheeses and real cream to make this best Tuna Casserole you will ever eat! Pasta Carbonara – Tagliatelle tossed with ham, peas & Parmesan in a creamy sauce. Fettuccini Alfredo – The classic or Chef CJ’s signature twist with sun dried tomatoes and caramelized onions. Also available with shrimp, mixed seafood or chicken. ASIAN Tuna Teriyaki – Ahi Tuna pan seared in Chef CJ’s own teriyaki sauce. Also available : Teriyaki Beef, Chicken or Salmon. Served with rice. Miso Salmon – Salmon filet coated in a Miso-Sake marinade, baked then served up over spinach and buckwheat soba noodles in a delicate Dashi broth. You’ve never tasted anything like this before, but we think you’ll order it again and again. Pad Thai – gently simmered chicken in a delicate Thai sauce tossed with eggs and bean sprouts, served over rice noodles and topped with fresh cilantro and peanuts. Also available with shrimp or tofu. Masaman Curry – Braised chunks of beef in a spicy,Thai curry and coconut milk sauce, with potatoes and onions. Topped with peanuts and cilantro, served over rice or rice noodles. This is also available with chicken or tofu. Sweet & Sour Prawns – Better than any Chinese take out you’ve ever had. No cheeto-orange sweet & sour sauce, ours is home made, fresh and no msg or artificial colors. Also available: Sweet & Sour Chicken or Pork. Cashew Pork – Pork and veggies stir-fried with cashews in a light stock. No msg. Served over rice or crunchy chow mein noodles. Chicken available. Tonkatsu** – Pork (or chicken) cutlet breaded in Japanese Panko, fried and served with the traditional spicy-sweet tonkatsu sauce (made by Chef CJ). **Must have a deep fryer for this. Yaki Soba – Noodles tossed with veggies and your choice of meat or tofu in a tangy tonkatsu sauce topped with pickled ginger. Chef CJ’s favorite. |

SOUPS And SALADS Beef Bourguignonne – Burgundy beef stewed with Cognac, carrots, mushrooms and onions. This is truly a French classic. Clam Chowder – New England style with potatoes and onions. Sumptuous. Chicken Noodle – Made with gently poached chicken, diced carrots, celery and onions with tasty Udon noodles. Country style with Egg noodles. Beef Stew – Chunks of beef with carrots, onions, celery, potatoes and peas are slow braised in a hearty beef broth. Chili – All meat or with beans, this chili is a complete meal. Seafood Bisque – Similar to chowder with all the best the sea has to offer. Lobster, Crab or Shrimp Bisque also available. Chicken Caesar Salad – Made with crisp Romaine Hearts, grilled Chicken Breast and fresh grated Parmesan cheese. For a twist, ask Chef CJ to make the Mediterranean version, which comes with sun-dried tomatoes, Kalamata olives and pine nuts. Shrimp or Crab Caesar also available. Cobb Salad – The King of salads. With diced chicken, bacon, avocado, olives, hard boiled eggs and crumbled blue cheese, this salad is a complete meal. Crab Louis – Crisp Iceberg lettuce, pickled green beans (or asparagus when in season), and hard-boiled egg topped with fresh Crab & served with Chef CJ’s own 1000 Island dressing. VEGETARIAN Spaghetti – Slowly simmered tomato sauce with onions, mushrooms and garlic. 3 Pepper Pasta – Red, Yellow and Green Bell peppers sautéed in vegetable stock, sprinkled with herbs and Parmesan cheese. Mousaka – Baked Eggplant with Tomatoes, peppers and mushrooms. Pad Thai with Tofu – served with traditional Thai rice noodles and egg. Baked Ziti – mushrooms, garlic & onions simmered in a rich tomato sauce baked with Ziti and a blend of Italian cheese. Yaki Soba – Firm Japanese noodles tossed with veggies, tofu and tangy tonkatsu sauce, topped with pickled ginger slices. Minestrone – Classic Italian full of vegetables, beans and pasta. Pecan Pasta – Roasted pecans sautéed in a garlic tomato sauce served over spaghetti. Veggie Stir Fry – Classic Chinese stir fry with Tofu, served with rice. Cheese and Black Bean Enchiladas – Cheese, onions, black beans & olives wrapped in whole-wheat tortillas, baked in spicy enchilada sauce. Served with Spanish Rice. |
